Ingredients
1 gallon of whole milk (not ultra-pasteurized)
1 1/4 teaspoons of citric acid
1/4 teaspoon of liquid rennet (or 1/4 tablet of rennet, dissolved in 1/4 cup of cool, unchlorinated water)
1 teaspoon of cheese salt (optional)
1/4 cup of cool, unchlorinated water
